Mexican leftover salad
One thing I love is Mexican food. One thing I hate is having food waste. There’s so much poverty in the world that it is criminal the amount of food that gets binned.
There’s always bits of food left in our fridge! Sometimes, I open the fridge and think to myself, I have to use all these bits up? What can I do with it all? This is where this particular dish has come from. Sure, sometimes it doesn’t go great but other times you end up with a banger… its all part of the challenge!
This is exactly what happened with this one.
The Mexican Food Challenge
We had a roast chicken at the weekend, so there was some of that left over. We also had a Mexican food night so there was avocado, beans, salsa and Doritos left. When I opened the fridge I had a look in and thought… what am I going to do with all this?! I needed something quick and didn’t want to cook anything. It didn’t take me too long to come up with this one!
This recipe is a bit of a Mexican inspired chicken salad, which ticks a lot of boxes for me. From a nutrition perspective, it hits all the spots. There’s a good whack of protein and good fats in the chicken and avocado. Its low on carbs, using the left over Doritos. And, it uses up left overs in the fridge from the weekend.
Most of all, it tastes great and was super filling!
Of course, you dont have to use left overs. You can buy the ingredients, but where’s the fun in that! This shows you what you can rustle up from the left overs in the fridge. All you need is a bit of imagination and a pinch of inspiration.
I tossed everything into a bowl gave it a mix and it was good to go. I used the salsa instead of an oil dressing, the Doritos used for crunch instead of croutons and rice/pasta.
There’s lots of great veggies in here to bulk it out. I used left over broccoli, which i always have a bit knocking about in the fridge. I simply boil when I have a spare 10 minutes so that its ready to rock when I need it.
For something knocked together with the leftovers, I’m pretty pleased with this one. You dont even need to do any chopping, whack it all in a bowl and mix it up – I hope you enjoy it!
What you’ll need
40g Doritos – lightly salted – crunched into small pieces in the packet
100g Baked Chicken breast – torn into small pieces
30g Black-eyed beans or cannellini beans (in fact any sort of bean would do)
35g Avocado – mashed
100g Tenderstem broccoli – torn into pieces
Hand big full of salad – i used a watercress and rocket salad
Couple of big spoons of Jarred salsa
3-4 Jarred jalapeños for added zing! (Optional)
Method
Do you really need a method to make a salad? if you do then here it goes:
- Crunch, tear and mash all your ingredients
- Put all ingredients into a large bowl, season with a touch of salt and pepper.
- Mix well and adjust the salsa quantity so that everything is coated – adjust the salsa quantity if needed
- Enjoy
